
Got a case of “Mondayitis? Spent the weekend plying yourself full of pepperoni pizza and cherry pie? Well, Monday is the perfect day to pull yourself together and incorporate a “Healthy Monday” tip into your weekly digest.
Healthy Monday is a non-profit public health organization founded in 2005 in association with Johns Hopkins University, Columbia University and Syracuse University.
Their goal is to end chronic preventable disease in the U.S. by offering people and organizations a weekly prompt to start and sustain healthy behaviors, intentions, actions and initiatives.
The organization helps their partners use Monday motivation to move healthy products or services, raise funds, reduce health care costs, sustain awareness and/or drive disease management or behavior change programs.
Here’s a delicious, easy, and healthy cookie recipe from Cookie Madness. It’s a much healthier alternative to buying store bought cookies that are often packed with preservatives, salt, and refined sugar. This recipe uses oatmeal (a great source of whole grains), honey, agave (a natural sweetener with a low glycemic index) and whole grain flour. I added cranberries and coconut to the mix, which my 20 month old son LOVES.
Preparation:
Preheat the oven to 375 degrees F.
Mix egg, agave, honey, oil and vanilla together in a bowl. Stir very well. Combine flour, wheat germ, baking powder, baking soda, salt and cinnamon in a bowl. Stir very well, then add to agave mixture and stir until blended. Stir in the oats, cranberries coconut, and raisins. Let batter sit for about 5 minutes.
Using a tablespoon measure, scoop up dough and arrange on parchment lined cookie sheets spacing 2 inches apart. Bake one sheet at a time for about 10-11 minutes. Let cool completely.
Makes 8 cookies.
